Dinner Date


November 12th I made Dakotah and myself a nice fancy meal for a little dinner date. I know this might seem silly because really I cook a lot of the time. But even when you cook every day it doesn't mean it is a nice fancy type meal or even a date type meal, even if you are the only two people there and sitting in the same room while you eat it doesn't make it a date. I feel that a date has actual thought that goes into it and meaning. So I wanted to make kind of our own little private dinner date (at least one more time before baby comes) at our nice new dinning room table (since most the time we eat on the couch in front of the TV). So we had a good dinner and nice talk and then watched a movie and cuddled after. It was a great night! One thing I loved about it is even though there was thought that went into it, it really didn't take long or much work to make the meal or clean up after. So I wanted to share my easy date night dinner with you. I made One-Dish Chicken & Rice Bake, served with Frozen Mixed Vegetables, Rolls, and Sparkling White Grape for the drink.

One-Dish Chicken & Rice Bake
1 can Cream of Mushroom Soup 
1 cup Water
3/4 cup Uncooked white rice
1/4 teaspoon paprika
1/4 teaspoon pepper
4 skinless, boneless Chicken Breast Halves (about 1 pound)
*For creamier rice, increase water to 1 1/3 cup

1. In 2-quart shallow baking dish mix soup,water, rice, paprika, and pepper. Place chicken on rice mixture. Sprinkle with additional paprika and pepper. Cover.
2. Bake at 375 degrees for 45 minutes or until chicken is no longer pink and rice is done. 
Makes 4 servings, Prep Time: 5 minutes, Cook Time: 45 minutes.

  1. Fun! These are my favorite kind of dates. For some reason, those at-home, simple dinner dates just seem to mean so much more. And another plus, they can still work pretty good even after having a baby as long as you don't mind having dinner a little bit later. Thanks for the recipe, too! :) Love ya, girl!
